- 4 medium sweet potatoes scrubbed clean
- 4 tablespoons unsalted butter softened
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup sour cream optional, for topping
- Salt and pepper to taste
- Milk or cream as needed for consistency
Preheat oven to 375°F (190°C).
Pierce sweet potatoes and bake on a tray for about 1 hour, until tender.
Cut sweet potatoes in half lengthwise and scoop out the flesh, leaving a thin layer in the skin.
