Ingredients
  

  • 6 egg yolks
  • 2/3 cup granulated sugar
  • 1/4 tsp salt
  • 24 oz cold mascarpone
  • 2 tsp vanilla extract
  • cups heavy whipping cream
  • 2 cups cold espresso
  • 1/4 cup Kahlua optional
  • 40 –45 ladyfingers
  • 1/4 cup unsweetened cocoa powder

Instructions
 

  • Whisk yolks, sugar, and salt over simmering water for 10–13 minutes (165°F).
  • Cool for 10 minutes.
  • Whisk in mascarpone and vanilla until smooth.
  • Beat cream to stiff peaks and fold into mascarpone mixture.
  • Combine espresso and Kahlua.
