- 24 oz cold mascarpone
- 2 tsp vanilla extract
- 1½ cups heavy whipping cream
- 2 cups cold espresso
- 1/4 cup Kahlua optional
- 40 –45 ladyfingers
- 1/4 cup unsweetened cocoa powder
Whisk yolks, sugar, and salt over simmering water for 10–13 minutes (165°F).
Cool for 10 minutes.
Whisk in mascarpone and vanilla until smooth.
Beat cream to stiff peaks and fold into mascarpone mixture.
Combine espresso and Kahlua.
