This light and airy marshmallow-style cake combines fresh strawberries, applesauce, and gelatin for a naturally sweet, pillowy dessert. It’s easy, refreshing, and perfect for spring celebrations or afternoon treats—no baking required!

Ingredients
  

  • ½ cup 77 g chopped strawberries (cut into ½ inch cubes)
  • 1 ⅓ cups 313 g unsweetened applesauce
  • 4 ½ tsp 15 g unflavored gelatin powder

Instructions
 

  • Line an 8- or 9-inch square pan with parchment paper.
  • Blend strawberries and applesauce until smooth.
  • Pour into a heatproof bowl. Sprinkle gelatin over the top and whisk.
  • Heat gently over a double boiler, stirring until gelatin is dissolved. Cool for 10 minutes.
  • Transfer to a stand mixer and beat on high speed for 15 minutes until fluffy.
