- 2 large eggs
- ¼ tsp oregano
- ¼ tsp garlic powder
- Salt to taste
- ½ tbsp butter divided
- ½ cup baby spinach
- ¼ cup crumbled feta cheese
In a small bowl, whisk eggs, oregano, garlic powder, and salt.
Melt ¼ tbsp butter in a nonstick skillet.
Add spinach and sauté until wilted. Transfer to a plate.
Add remaining butter to the skillet.
Pour in eggs, cover and cook for 1–2 minutes.
