- 3 lbs red potatoes sliced into 1/4″ rounds
- 2 tbsp olive oil
- 2 garlic cloves pressed
- 1 lb kielbasa sausage sliced into 3/4″ pieces
- 2 tbsp chopped fresh parsley or 1/2 tbsp dried
- 1 tsp sea salt
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Toss sliced potatoes and kielbasa with oil, garlic, parsley, and salt.
Spread on baking sheet in a single layer.
Roast 40–45 minutes, flipping halfway through.
Serve hot, garnished with more parsley if desired.
