Ingredients
  

  • 3 lbs red potatoes sliced into 1/4″ rounds
  • 2 tbsp olive oil
  • 2 garlic cloves pressed
  • 1 lb kielbasa sausage sliced into 3/4″ pieces
  • 2 tbsp chopped fresh parsley or 1/2 tbsp dried
  • 1 tsp sea salt

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Toss sliced potatoes and kielbasa with oil, garlic, parsley, and salt.
  • Spread on baking sheet in a single layer.
  • Roast 40–45 minutes, flipping halfway through.
  • Serve hot, garnished with more parsley if desired.

Notes

  • For extra crispiness, broil the last 2–3 minutes.
