Ingredients
  

For the Salad:

  • 2 cups fresh pineapple diced
  • 1 large English cucumber diced (or 2 Persian cucumbers)
  • ¼ small red onion thinly sliced
  • ¼ cup fresh cilantro chopped
  • 1 small jalapeño thinly sliced (optional)
  • ¼ cup crumbled feta cheese optional

For the Dressing:

  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes optional

Instructions
 

  • Dice pineapple and cucumber. Slice onion and jalapeño.
  • Chop cilantro and crumble feta.
  • Whisk lime juice, honey, oil, salt, pepper, and red pepper flakes in a small bowl.
  • In a large bowl, toss together pineapple, cucumber, onion, jalapeño, and cilantro.
  • Drizzle with dressing.
