A delicious and refreshing sorbet made from fresh pineapple and coconut milk, with a hint of lime and dark rum. It’s the perfect summer dessert that’s easy to make and even easier to enjoy.

Ingredients
  

  • 1 fresh pineapple cubed
  • 1 cup light canned coconut milk
  • cup granulated sugar
  • Juice of a lime
  • 2 tablespoons dark rum
  • ½ teaspoon coconut extract optional

Instructions
 

  • Add all ingredients to a blender and blend until smooth.
  • Chill the mixture in the fridge until cold (at least 2 hours).
  • Whisk if separated, then pour into an ice cream maker.
  • Churn according to the manufacturer’s instructions.
  • Store in a freezer-safe airtight container until ready to serve.

Notes

  • For an extra creamy texture, use full-fat coconut milk, though the sorbet may be richer in flavor.
  • If you prefer a non-alcoholic version, simply omit the rum.
