- 1 fresh pineapple cubed
- 1 cup light canned coconut milk
- ⅔ cup granulated sugar
- Juice of a lime
- 2 tablespoons dark rum
- ½ teaspoon coconut extract optional
Add all ingredients to a blender and blend until smooth.
Chill the mixture in the fridge until cold (at least 2 hours).
Whisk if separated, then pour into an ice cream maker.
Churn according to the manufacturer’s instructions.
Store in a freezer-safe airtight container until ready to serve.
