Peach Cake
- 3 eggs beaten
- 1¼ cups white sugar
- ½ cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- 2 cups peach chunks
- 1 cup pureed peaches
Cinnamon Glaze
- ⅓ cup pureed peaches
- ⅓ cup sugar
- 1 teaspoon butter
- ¼ teaspoon vanilla
- ¾ teaspoon cinnamon
- ½ cup chopped pecans optional
