  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 2 cups peach chunks
  • 1 cup pureed peaches

Cinnamon Glaze

  • cup pureed peaches
  • cup sugar
  • 1 teaspoon butter
  • ¼ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • ½ cup chopped pecans optional
  • Peach slices optional, for topping

Instructions
 

  • Preheat oven to 375°F (190°C). Grease and flour a bundt cake pan.
  • In a large bowl, mix eggs, sugar, and oil. Stir in pureed peaches.
  • In a separate bowl, whisk together flour, salt, baking soda, and cinnamon.
  • Add dry mixture to wet, mixing until fully incorporated.
  • Fold in peach chunks gently by hand.
  • Pour batter into prepared pan.
  • Bake for 50–60 minutes or until a toothpick inserted comes out clean.
