  • lbs Yukon Gold or baby potatoes halved
  • 2 tbsp olive oil
  • 2 tbsp freshly grated Parmesan
  • Salt & pepper to taste

Instructions
 

  • Preheat oven to 425°F.
  • Line a sheet with parchment and brush with oil.
  • Toss potatoes with oil, garlic, herbs, salt, and pepper.
  • Arrange cut-side down, roast 20 min.
  • Flip, roast 10 min.
  • Sprinkle Parmesan, roast 8–10 min more until golden.
