This Orange Pistachio Cake is a moist, flourless dessert made with whole oranges, honey, almond flour, and ground pistachios. Ingredients
  

  • 2 whole oranges
  • 3 large eggs
  • cup honey
  • 1 cup ground pistachios
  • 2 cups almond flour
  • 1 tsp vanilla extract
  • ½ tsp baking soda

Glaze:

  • ½ cup fresh orange juice
  • 2 tbsp honey

Instructions
 

  • Simmer oranges for 1 hour, then blend into puree.
  • Preheat oven to 350°F and prepare a 9-inch pan.
  • Mix all cake ingredients until smooth.
  • Pour into pan and bake for 1 hour. Cover if browning.
  • Simmer orange juice and honey to make glaze.
  • Brush glaze over warm cake. Cool before serving.

Notes

Use Seedless Oranges: If your oranges have seeds, remove them before blending. Navel or Cara Cara oranges work beautifully.
No Pistachios? Swap with finely ground walnuts or hazelnuts for a different flavor profile.
Make Ahead: The flavor deepens overnight. Bake the day before and glaze just before serving.
