- 2 whole oranges
- 3 large eggs
- ⅔ cup honey
- 1 cup ground pistachios
- 2 cups almond flour
- 1 tsp vanilla extract
- ½ tsp baking soda
Glaze:
- ½ cup fresh orange juice
- 2 tbsp honey
Simmer oranges for 1 hour, then blend into puree.
Preheat oven to 350°F and prepare a 9-inch pan.
Mix all cake ingredients until smooth.
Pour into pan and bake for 1 hour. Cover if browning.
Simmer orange juice and honey to make glaze.
Brush glaze over warm cake. Cool before serving.
