- 1 cup Medjool dates about 12, pitted
- 1/2 cup smooth almond butter
- 1/2 cup whole pecans
- 1 teaspoon pure vanilla extract
- 1 tablespoon chia seeds
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
Soak dates in hot water for 10 minutes, then drain.
Add all ingredients to a food processor. Blend until thick and sticky.
If needed, add 1 tablespoon water to help the dough come together.
Chill dough for 1 hour.
Roll into 20 balls and refrigerate. Enjoy!
