- ¼ tsp red pepper flakes
- ½ cup chopped sun-dried tomatoes
- 1 can 15 oz chickpeas, drained & rinsed
- 1 cup orzo pasta
- 2½ cups vegetable broth
- ½ cup heavy cream or dairy-free alternative
- 2 cups fresh spinach
- ¼ cup grated Parmesan optional
- Salt & pepper to taste
Heat oil & butter; sauté onion until translucent.
