For the Roast:
- 2 tbsp olive oil
- 2 lb lean pork loin roast fat trimmed
- Salt and pepper to taste
- 3 large sweet onions coarsely chopped
- 4 large gala apples chopped with peels on
- 1 tsp fresh or dried thyme chopped
- 1 tsp fresh or dried rosemary chopped
- ½ tsp smoked paprika
For the Glaze:
- ⅓ cup real maple syrup
- 2 cloves garlic minced
- 1 tsp Dijon mustard
- 1 tsp thyme
- 1 tsp rosemary
- 1 tbsp soy sauce low-sodium if preferred
Preheat oven to 375°F (190°C).
Heat oil in large cast iron skillet over medium-high heat.
Pat pork dry, season with salt and pepper, and sear on all sides until golden.
Remove to plate.
Add onions, apples, thyme, rosemary, and paprika to skillet. Cook until softened.
In small bowl, whisk glaze ingredients.
Return pork to skillet, nestling it in apples and onions.
