Ingredients
  

  • 12 lasagna noodles cooked and drained
  • 1 lb ground beef
  • 1 small onion finely diced
  • 3 cups marinara sauce
  • 2 cloves garlic minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 oz ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese divided
  • 1/2 cup grated parmesan cheese
  • Fresh parsley or basil for garnish optional

Instructions
 

  • Boil lasagna noodles until al dente. Drain and lay flat.
  • In a skillet, cook onion and beef until browned. Drain fat.
  • Add marinara, garlic, Italian seasoning, salt, and pepper. Simmer.
  • In a bowl, mix ricotta, egg, 1 cup mozzarella, parmesan, salt, and pepper.
  • Spread ricotta mixture on noodles, top with meat sauce, and roll up.

Notes

  • You can prep and assemble ahead of time, then refrigerate before baking.
  • Substitute ground turkey or sausage for beef if preferred.
  • Try adding chopped spinach to the ricotta mixture for extra veggies.
