Creamy, spiced, and beautifully blush, Kashmiri Pink Chai (also known as Noon Chai) is a comforting tea made with green tea leaves, warming spices, and milk. A pinch of baking soda transforms its color into that signature rosy hue.

- 4 cups water
- 2 tbsp Kashmiri or green tea
- ½ tsp baking soda
- 1 –2 star anise
- 2 cardamom pods crushed
- 1 cinnamon stick
- ¼ tsp salt
- 2 cups whole milk
- Sugar or honey to taste
- Crushed nuts optional
Boil water and green tea for 5 minutes.
Add baking soda and boil 2 more minutes.
Add spices and boil 1 minute.
Simmer on low 20–30 minutes to reduce by half.
Stir in salt.
Add milk and bring to a boil, whisking until pink.
