Ingredients
  

Salad:

  • 2 cups elbow macaroni
  • 1 cup chopped bell pepper
  • 1 cup diced celery
  • ½ cup diced onion
  • 2 –3 tbsp chopped green onion for garnish
  • tsp paprika

Dressing:

  • ½ cup Greek yogurt
  • ½ cup mayo
  • 2 tbsp white vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp yellow mustard
  • ¼ –½ tsp dried parsley
  • ¼ –½ tsp salt
  • ¼ tsp garlic powder
  • Pepper to taste

Instructions
 

  • Cook pasta, drain, and cool completely.
  • Whisk together dressing ingredients.
  • Combine pasta, veggies, and half the dressing. Mix well.
  • Chill covered for at least 1 hour.
  • Add remaining dressing before serving. Garnish and enjoy.
