Salad:
- 2 cups elbow macaroni
- 1 cup chopped bell pepper
- 1 cup diced celery
- ½ cup diced onion
- 2 –3 tbsp chopped green onion for garnish
- ⅛ tsp paprika
Dressing:
- ½ cup Greek yogurt
- ½ cup mayo
- 2 tbsp white vinegar
- 1 tbsp Dijon mustard
- 1 tbsp yellow mustard
- ¼ –½ tsp dried parsley
- ¼ –½ tsp salt
- ¼ tsp garlic powder
- Pepper to taste
Cook pasta, drain, and cool completely.
Whisk together dressing ingredients.
Combine pasta, veggies, and half the dressing. Mix well.
Chill covered for at least 1 hour.
Add remaining dressing before serving. Garnish and enjoy.
