For the base biscuit:
- 1 ¾ cups plain 2% Greek yogurt
- 4 eggs
- 2 ½ cups all-purpose flour
- ¼ cup ground flaxseed
- 1 teaspoon garlic powder
- ½ teaspoon red pepper flakes
- 1 tablespoon baking powder
- 2 teaspoons salt
Ham, Cheese & Chive (original variation):
- 1.5 cups spinach chopped
- ½ cup chives finely diced
- 1.5 cups cheddar cheese shredded (divided)
- 2 cups cooked ham diced
Mediterranean Sausage variation:
- ½ cup sun-dried tomatoes chopped
- 2 cups Italian chicken sausage cooked (removed from casing)
- 1.5 cups feta cheese
- 1.5 cups spinach chopped
- 2 teaspoons dried basil
Preheat oven to 400°F. Line baking tray(s) with parchment paper.
In a bowl, whisk Greek yogurt and eggs.
In another bowl, mix flour, flaxseed, garlic powder, red pepper flakes, baking powder, and salt.
Gradually mix dry into wet ingredients until combined.
Stir in mix-ins and 1 cup of cheese. Use hands to incorporate evenly.
With floured hands, shape dough into 12 round, 1-inch thick biscuits.
Place on tray. Top with remaining cheese.
