- 4 cups all-purpose flour
- 1 packet 2¼ teaspoons active dry yeast
- 1¾ cups warm water about 110°F
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 tablespoons dried Italian herbs basil, oregano, thyme, rosemary
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Extra flour for dusting
Mix water, sugar, and yeast; let it foam (5 min).
Add flour, salt, herbs, and cheeses; stir to form dough.
Knead on floured surface 8–10 min until elastic.
Let rise in greased bowl, covered, 1–2 hrs until doubled.
Punch down and shape into loaf; let rise again 30 min.
Preheat oven to 450°F with pan of water on bottom rack.
