- 1 tbsp olive oil
- ½ cup diced onion
- 1 tbsp chopped garlic
- 2 lbs ground chicken
- 1 tsp kosher salt
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp dried parsley
- 8 oz tomato sauce or marinara
- 1 tbsp balsamic vinegar
- 8 oz mozzarella pearls
- 10 oz cherry tomatoes halved
- Fresh chopped basil balsamic glaze, and grated parmesan for garnish
Preheat oven to 500°F.
In oven-safe skillet, heat oil. Add onions and cook 5 mins.
Add garlic and cook 1 min more.
Add ground chicken, cook until browned.
Drain excess fat if needed.
Season with salt, oregano, basil, and parsley.
Stir in tomato sauce and balsamic vinegar.
