This Ground Chicken Caprese Skillet is a quick and wholesome one-pan meal packed with Italian flavor. It’s loaded with tender chicken, juicy tomatoes, melty mozzarella pearls, and finished with fresh basil and a balsamic glaze.

Ingredients
  

  • 1 tbsp olive oil
  • ½ cup diced onion
  • 1 tbsp chopped garlic
  • 2 lbs ground chicken
  • 1 tsp kosher salt
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • 8 oz tomato sauce or marinara
  • 1 tbsp balsamic vinegar
  • 8 oz mozzarella pearls
  • 10 oz cherry tomatoes halved
  • Fresh chopped basil balsamic glaze, and grated parmesan for garnish

Instructions
 

  • Preheat oven to 500°F.
  • In oven-safe skillet, heat oil. Add onions and cook 5 mins.
  • Add garlic and cook 1 min more.
  • Add ground chicken, cook until browned.
  • Drain excess fat if needed.
  • Season with salt, oregano, basil, and parsley.
  • Stir in tomato sauce and balsamic vinegar.

Notes

  • For extra flavor, use fresh oregano and basil instead of dried.
