For the Cake:
- 2 large eggs room temp
- ¾ cup 180g milk
- ⅓ cup 75g vegetable oil
- ¼ cup 60g fresh lime juice
- 1 tbsp lime zest
- 2 tbsp 24g lime gelatin powder
- 1½ cups 180g all-purpose flour
- ¾ cup 150g sugar
- 2 tsp 8g baking powder
- ¼ tsp 1g salt
For the Lime Frosting:
- 1⅓ cups 397g sweetened condensed milk
- ⅓ cup 80g fresh lime juice
- 1 tbsp 12g lime gelatin powder
- 2 tbsp 30g hot water
Preheat oven to 350°F (180°C). Line an 8-inch square pan with parchment.
In a large bowl, whisk eggs for 1 minute.
Add milk, oil, lime juice, zest, and gelatin.
Mix until smooth.
Sift in flour, sugar, baking powder, and salt.
Gently whisk until just combined.
Pour into pan and bake for 30 minutes or until a toothpick comes out clean.
Cool completely.
