- 1 Tbsp lemon juice
- 4 cups Granny Smith apples peeled and cubed
- ½ cup old-fashioned oats
- 1 cup all-purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- ½ cup unsalted butter softened
- ½ cup granulated sugar
- ½ tsp vanilla extract
- ½ tsp salt
- 2 large eggs
- ¼ cup apple juice or water
- ¾ cup pecans chopped and divided
- ¾ cup powdered sugar
- 1 Tbsp milk
Preheat oven to 375°F. Grease a 9×13-inch pan.
Mix apples with lemon juice.
Blend oats and mix with flour, baking soda, and cinnamon.
Cream butter and sugar; add vanilla, salt, and eggs.
Fold in half the dry mixture, then apple juice, then the rest.
Stir in apples and ½ cup pecans.
