Ingredients
  

  • 1 Tbsp lemon juice
  • 4 cups Granny Smith apples peeled and cubed
  • ½ cup old-fashioned oats
  • 1 cup all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ tsp vanilla extract
  • ½ tsp salt
  • 2 large eggs
  • ¼ cup apple juice or water
  • ¾ cup pecans chopped and divided
  • ¾ cup powdered sugar
  • 1 Tbsp milk

Instructions
 

  • Preheat oven to 375°F. Grease a 9×13-inch pan.
  • Mix apples with lemon juice.
  • Blend oats and mix with flour, baking soda, and cinnamon.
  • Cream butter and sugar; add vanilla, salt, and eggs.
  • Fold in half the dry mixture, then apple juice, then the rest.
  • Stir in apples and ½ cup pecans.
