Instructions
 

  • Prepare and sauté any fillings; set aside.
  • Beat eggs well; season with salt and pepper
  • Heat butter or oil in a nonstick skillet over medium-low heat.
  • Pour eggs into skillet; let sit 20–30 seconds.
  • Gently push edges toward center, letting raw egg flow.
