For the Tea Concentrate:
- 1½ cups water
- 3 tbsp loose leaf Earl Grey tea or 9 bags
- ¼ cup granulated sugar
- 1 tbsp vanilla paste or extract
- Pinch kosher salt
For the Mascarpone Whipped Cream:
- 1¼ cups cold heavy cream
- 8 oz mascarpone cold
- 1 tbsp vanilla paste or extract
- 4 large pasteurized egg yolks
- ½ cup granulated sugar
- Pinch kosher salt
Other:
- Ladyfingers
- Optional: edible flowers or dusted tea leaves for garnish
Steep tea in boiling water 10–15 min.
Strain over sugar, stir in vanilla and salt. Cool.
Whip cream to soft peaks. A
dd mascarpone and vanilla, mix until smooth.
Beat egg yolks, sugar, and salt until fluffy. Fold in whipped mascarpone cream.
