Ingredients
  

For the Tea Concentrate:

  • cups water
  • 3 tbsp loose leaf Earl Grey tea or 9 bags
  • ¼ cup granulated sugar
  • 1 tbsp vanilla paste or extract
  • Pinch kosher salt

For the Mascarpone Whipped Cream:

  • cups cold heavy cream
  • 8 oz mascarpone cold
  • 1 tbsp vanilla paste or extract
  • 4 large pasteurized egg yolks
  • ½ cup granulated sugar
  • Pinch kosher salt

Other:

  • Ladyfingers
  • Optional: edible flowers or dusted tea leaves for garnish

Instructions
 

  • Steep tea in boiling water 10–15 min.
  • Strain over sugar, stir in vanilla and salt. Cool.
