Ingredients
  

  • 4 chicken thighs boneless, skinless or bone-in
  • 8 cups chicken broth
  • 6 cups water
  • 2 carrots sliced
  • 2 celery ribs sliced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 1 tsp salt or to taste
  • 5 oz egg noodles about 2 cups

Instructions
 

  • In a large pot, combine chicken, broth, and water.
  • Bring to a boil, then simmer 25 minutes.
  • Remove chicken, shred it, and set aside.
  • Add vegetables and bay leaves to broth. Simmer 12–15 minutes.

Notes

  • You can use rotisserie chicken instead of cooking thighs—just skip the boiling step and add shredded chicken in with the noodles.
