For the Chicken:
- 3 large chicken breasts 12 oz each
- 2 eggs beaten
- 1/2 cup all-purpose flour
- 2 cups panko breadcrumbs
- Salt and black pepper to taste
- Extra light olive oil or canola oil for sautéing
For the Lemon-Herb Garlic Butter:
- 6 tablespoons unsalted butter room temperature
- 1 large garlic clove minced
- 1 tablespoon lemon juice plus more for drizzling
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Mash butter, garlic, lemon juice, parsley, salt, and pepper together until smooth.
Slice chicken breasts horizontally to create 6 portions.
Cut a pocket in each and stuff with garlic butter.
Pinch to seal and season with salt and pepper.
Dredge each piece in flour, then egg, then breadcrumbs.
