- 2 large English cucumbers sliced into ⅓-inch rounds
- ½ tsp salt
- ½ cup chopped toasted peanuts
- 2 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp peanut butter
- 1 tbsp honey
- 2 garlic cloves minced
- 1 tsp red chili flakes
- ¼ tsp ground black pepper
- 2 tbsp fresh parsley chopped
Toss cucumbers with salt and let drain in a colander for 1 hour.
In a bowl, whisk soy sauce, vinegar, peanut butter, honey, garlic, chili flakes, and pepper until smooth.
Combine cucumbers with peanuts, parsley, and sauce. Toss to coat.
