- 2 Tbsp unsalted butter 28 g
- 4 cloves garlic minced
- ½ tsp each salt oregano, crushed red pepper flakes, smoked paprika
- ¼ tsp ground black pepper
- ½ cup sun-dried tomatoes roughly chopped
- ½ to 1 cup vegetable broth 120 to 236 mL
- 2 15-oz cans butter beans, drained (425 g each)
- 1 cup chopped fresh spinach
- 1 cup heavy cream 236 mL
- ½ cup grated parmesan 50 g
- 2 Tbsp chopped fresh basil
Melt butter in a large skillet over medium heat.
Stir in garlic and seasonings. Cook 2 minutes until fragrant.
Add sun-dried tomatoes, broth, and butter beans.
Simmer uncovered for 5 minutes.
Remove from heat. Stir in spinach until wilted.
