- 6 slices bacon chopped
- 14 –16 oz boneless skinless chicken breasts, cubed
- 2½ cups water about 20 oz
- 8 oz uncooked penne pasta
- 1 tbsp ranch seasoning
- ½ cup heavy cream about 4 oz
- 1 cup sharp cheddar cheese freshly grated
- 1 tbsp chopped fresh parsley plus more for garnish, optional
- Olive oil if needed, to supplement bacon grease
In a large sauté pan over medium heat, cook the chopped bacon until crispy.
Transfer bacon to a plate lined with paper towel.
Keep about 2 tablespoons of bacon grease in the pan and discard the rest.
Add olive oil if needed.
Add the cubed chicken to the same pan and cook for 3–4 minutes, until no longer pink.
Remove the chicken and keep it warm.
