Ingredients
  

Soup Base:

  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes peeled and cubed
  • 1/2 cup heavy whipping cream
  • 1 cup mild cheddar cheese shredded
  • Chopped parsley for garnish

Instructions
 

  • Brown sausage in oil for 3-4 minutes. Set aside.
  • Sauté onion, celery, and bell pepper for 5-8 minutes. Add garlic.
  • Add Cajun spices, broth, and potatoes. Simmer 20-25 minutes.
  • Return sausage. Stir in cream and cheese. Simmer 5 more minutes.
  • Garnish with parsley. Serve warm.
