Ingredients
  

For the cocktail:

  • 1.5 oz coconut tequila I use 1800 Coconut Tequila
  • 0.5 oz orange liqueur
  • 0.5 oz coconut water
  • 0.5 oz freshly squeezed lime juice
  • Fresh mint leaves

For the pink coconut ice cubes:

  • Pink coconut water frozen in round ice molds

Instructions
 

  • Freeze pink coconut water in ice molds.
  • Muddle mint in lime juice at the bottom of a shaker.
  • Add ice, coconut tequila, orange liqueur, and coconut water.
  • Shake well.
  • Strain into a glass and top with a pink ice cube.
  • Garnish with mint and enjoy!

Notes

  • You can make your own pink coconut water by blending coconut water with a small amount of beet juice or pomegranate juice for color.
  • If you don’t have round molds, any ice tray will work—the color is what makes them special!
  • Use fresh-squeezed lime juice for best flavor—bottled versions don’t offer the same brightness.
