- Beef Stew
- 6 oz bacon chopped
- 2 Tbsp olive oil
- 2 lbs beef stew meat or chuck cut into 1″ pieces
- 2½ tsp sea salt divided
- 1½ tsp black pepper divided
- ¼ cup all-purpose flour
- 2 cups dry red wine
- 1 lb mushrooms sliced
- 4 carrots peeled and sliced
- 1 medium yellow onion diced
- 4 garlic cloves minced
- 1 Tbsp tomato paste
- 4 cups low sodium beef broth
- 2 bay leaves
- ½ tsp dried thyme
- 1 lb small potatoes halved or quartered
Sauté bacon in large oven-proof pot until crisp; transfer to a bowl.
Season beef with salt, pepper, and flour.
Brown in batches in bacon fat; transfer to bowl.
Deglaze pot with wine, add mushrooms, and simmer 10 minutes.
In another pan, sauté carrots, onions, garlic, and tomato paste. Add to stew pot.

If the sauce needs thickening, simmer uncovered on the stove for 10–15 minutes after baking.
