- Chicken
- 2 large boneless skinless chicken breasts
- Salt & pepper to taste
- ¼ cup vegetable oil
- Flour Mixture
- ½ cup flour
- 1½ tsp seasoned salt
- ¼ tsp pepper
- Eggs
- 2 large eggs beaten
- ½ tsp garlic powder
- Breading
- 1½ cups panko breadcrumbs
- ⅓ cup Parmesan cheese grated
- 1 tsp dried parsley
- 1 tsp dried oregano
Cheese & Topping
- 1 cup marinara sauce
- 1½ cups mozzarella cheese shredded
- Fresh parsley to garnish
Preheat oven to 425°F. Set up flour, egg, and breadcrumb mixtures in shallow bowls.
Slice and pound chicken to ½-inch thick.
Season both sides with salt and pepper.
Dredge in flour, dip in egg, then coat in breadcrumb mixture.
Heat oil and fry chicken in batches, 3–4 min per side. Set on wire rack.
