Ingredients
  

  • 1 lb ground beef
  • 5 –6 slices bacon cooked and chopped
  • ½ medium yellow onion diced
  • 1 tablespoon minced garlic
  • 1 can 14.5 oz petite diced tomatoes, drained
  • ½ cup heavy whipping cream
  • –3 cups sharp cheddar cheese shredded (divided)
  • 12 –13 oz cheese tortellini

Instructions
 

  • Bring a large pot of water to boil.
  • Cook tortellini according to package directions.
  • Drain and toss with a little olive oil to prevent sticking. Set aside.
  • In a large skillet over medium-high heat, cook the bacon until crispy.
  • Let cool slightly, then chop. Reserve a small portion for garnish.
  • In the same skillet, sauté the diced onion in remaining bacon grease for 2–3 minutes.

  • Add minced garlic and cook for 30 seconds until fragrant.

Notes

  • You can substitute the sharp cheddar with another cheese, such as mozzarella or Monterey Jack, for a different flavor.
  • If you prefer, you can use ground turkey or chicken instead of beef for a lighter version.
