This cozy seafood casserole is pure comfort food. A creamy base full of tender seafood and vegetables is crowned with savory cheddar bay biscuits for a one-dish dinner that’s simple enough for weeknights and special enough for guests.

Ingredients
  

  • 1 lb 450 g shrimp, peeled and deveined
  • 14 oz 400 g crab meat (or imitation crab)
  • 1 ¼ cups 150 g cod or haddock fillets, cut into chunks
  • 1 cup 130 g frozen mixed vegetables (peas, carrots, corn)
  • 1 cup 240 ml heavy cream
  • 2 ¼ cups 530 ml chicken or seafood broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 package 11 oz / 311 g Cheddar Bay Biscuit mix (includes cheese and seasoning)
  • ¾ cup 180 ml milk
  • ¼ cup 60 g melted butter

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large skillet or pot over medium heat, cook the shrimp, crab, and fish just until the shrimp turns pink. Remove from heat.
  • In the same pot, add broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper.
  • Stir and bring to a gentle simmer.
  • Add the mixed vegetables and the cooked seafood.
  • Cook for about 5 minutes, stirring occasionally.

Notes

  • You can substitute crab with more shrimp or white fish.
