Ingredients
  

  • 3 cups cooked and chopped broccoli
  • 1 large egg
  • 12 Ritz crackers crushed
  • 1 heaping cup of cheddar cheese plus more for topping
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 375°F.
  • In a medium bowl, mix all ingredients until well combined.
  • Generously grease a mini muffin tin. Distribute mixture evenly into about 16 cups.
  • Use fingers to press down and compact each portion firmly.
  • Top with extra cheddar cheese.
  • Bake for 14–16 minutes or until tops are golden and crisp.
  • Let cool for at least 5 minutes before removing from the pan.

Notes

  • You can also make these with other types of cheese, like mozzarella or Parmesan, for a different flavor twist.
  • For a gluten-free version, use gluten-free crackers instead of Ritz crackers.
