- 3 cups cooked and chopped broccoli
- 1 large egg
- 12 Ritz crackers crushed
- 1 heaping cup of cheddar cheese plus more for topping
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Preheat oven to 375°F.
In a medium bowl, mix all ingredients until well combined.
Generously grease a mini muffin tin. Distribute mixture evenly into about 16 cups.
Use fingers to press down and compact each portion firmly.
Top with extra cheddar cheese.
Bake for 14–16 minutes or until tops are golden and crisp.
Let cool for at least 5 minutes before removing from the pan.
