- 2 sheets puff pastry
- 2 cups blackberries
- ½ cup water
- 1 tablespoon lemon juice
- ¾ cup sugar
- 8 ounces goat cheese
- Zest of 2 lemons
- 4 teaspoons raw sugar
- 2 teaspoons fresh thyme minced
- 1 egg
Cook blackberries, water, lemon juice, and sugar in saucepan 20–30 mins until thickened.
Smash berries and cool.
Thaw puff pastry 20–25 mins. Roll out on floured surface.
Spread with goat cheese and jam.
Cut into 12 strips, fold and twist gently. Repeat with second sheet.
Brush with egg wash, sprinkle with lemon-thyme sugar.
