Ingredients
  

  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme minced
  • 1 egg

Instructions
 

  • Cook blackberries, water, lemon juice, and sugar in saucepan 20–30 mins until thickened.
  • Smash berries and cool.
  • Thaw puff pastry 20–25 mins. Roll out on floured surface.
  • Spread with goat cheese and jam.
  • Cut into 12 strips, fold and twist gently. Repeat with second sheet.
  • Brush with egg wash, sprinkle with lemon-thyme sugar.
