Ingredients
  

For the Sauce:

  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 tsp Sriracha or more
  • 2 tbsp honey

For the Chicken:

  • lbs boneless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 egg
  • 1 tbsp Sriracha
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • tsp cayenne pepper optional
  • 2 cups plain panko breadcrumbs
  • Canola oil for frying
  • Chopped parsley for garnish

Instructions
 

  • Mix sauce ingredients and set aside.
  • Whisk batter ingredients and toss chicken to coat.
  • Dredge chicken in panko.
  • Heat oil to 365°F. Fry chicken 2–3 minutes per side until golden and cooked through.
  • Drain, toss in sauce, and garnish with parsley. Serve hot!
