For the Cookies:
- 2 cups hazelnuts roasted and skinned (240g)
- 1 cup all-purpose flour
- ⅔ cup granulated sugar
- 4 Tbsp cornstarch
- ¼ tsp salt
- 5 oz cold unsalted butter cubed
- 2 tsp vanilla extract
For the Filling:
- 1 cup semi-sweet chocolate chips
Grind hazelnuts until fine. In a bowl, mix hazelnuts, flour, sugar, cornstarch, and salt.
Add butter and vanilla. Mix until dough forms.
Roll into 40 small balls (2 tsp each). Place on lined tray, flatten slightly, and chill 1 hour.
Preheat oven to 325°F. Bake 17–18 minutes. Cool completely.
