Ingredients
  

  • lbs russet or Yukon gold potatoes peeled and thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • cups milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese or Gruyère
  • 2 garlic cloves minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.
  • Melt butter in a saucepan. Whisk in flour and cook for 1 minute.
  • Slowly add milk and cream, whisking until thickened.
  • Add garlic, salt, pepper, and nutmeg.
  • Stir in cheese until smooth. Remove from heat.
  • Layer half the potatoes in the dish. Pour half the sauce over. Repeat.

Notes

  • You can use Gruyère cheese for a more complex, nutty flavor, or stick with the classic cheddar for a comforting, familiar taste.
  • For extra flavor, add a pinch of nutmeg or smoked paprika to the cheese sauce.
